The book that is an absolute MUST-have to understand essential oils is The chemistry of Essential Oils Made Simple by David Stewart.
THIS will help you understand the importance of quality and how oils and other substances behave. It will also give you a clue as to why there are often conflicting opinions on essential oils and how to use them.
This one also give a great explanation of other books on the topic… to help you make a good selection for reference materials.
While not an Aromatherapy school per-se, the Center for Aromatherapy Research and Education program at http://www.RaindropTraining.com provides training that is excellent! There will be classes in Dallas soon Too!
You may also want to look at the RealAromatherapy MeetUp at http://aromatherapy.meetup.com/101/ Next meeting is Dec. 13th in the evening

500 Formulas For Aromatherapy: Mixing Essential Oils for Every Use
Quite a good book infact. Will have everything about Aromatherapy you need in there. As for universities, I know there are many universities in Texas, and I assure you that the majority have some sort of program for Aromatherapy. It is definitely a smart path to go down, and is not a stressful job (in comparison to jobs which are very stressful such a Computer Engineering)
